My mom just shared a new blog with me that I absolutely LOVE! It is called Good Wine Under $20. The women who writes to blog, Deborah Harkness, is actually the author of The Discovery of Witches. My mom is obsessed with her trilogy and posted about it and this blog a few days ago. As you all know, I am a huge red wine drinker and in particular love Cabernet... I mean who doesn't love it?! I am always looking for new kinds that are rich in flavor but aren't going to put Moe and I more in debt than we already are! I don't know much about wine and am hoping to take a wine class in the near future, but I do know that I like the less fruity ones that are bold and relatively dry. Deborah Harkness had a post a few weeks ago that I really like. It had great ideas for the next time I go to the store to stock up!

Prosciutto Wrapped Fig with Gorgonzola Cheese
The idea for this recipe came from my friend at work. She had a dinner party and made a variation of these for her guests. They were a huge hit. I love fig and generally serve a fig jam on my cheese plates when I have company. I thought this would be a great change of pace for once as it is a hot appetizer. I'll be honest, they are not the most appeasing to the eye, but if you can get past that, they are simply wonderful :)
Prosciutto Wrapped Fig with Gorgonzola Cheese

Serves: 4 servings (2 per person) or 2 servings (4 per person)
8 dried figs
1/2 cup gorgonzola cheese
8 prosciutto slices (thin)
1 tabelspoon walnuts, finely chopped
1 tsp honey
Preheat oven to 400 degrees. Mix gorgonzola, walnuts, and honey together in a bowl. Slice fig in the middle to create a pocket.
Stuff gorgonzola mixture into fig and wrap in proscuitto. Place on a baking sheet and repeat steps for the remaining 7 figs. Place in oven for 8 to 10 minutes or until prosciutto is crisp. Allow to cool for 1 minute and then serve.

A Recipe for Inner Peace....
My friend sent me this at work the other day. I could not stop laughing so I thought you all might need alittle humor to brighten your day :)
I'm passing this on because it worked for me today. A Dr. on TV said to have inner peace we should always finish things we start & we all could use more calm in our lives. I looked around my house to find things I'd started & hadn't finished, so I finished off a bottle of Merlot, a bottle of Chardonnay, a bodle of Baileys, a butle of wum, tha mainder of Valiuminun scriptins, an a box a chocletz. Yu haf no idr how fablus I feel rite now. Sned this to all who need inner piss. An telum i luvum..

Restaurant Review: Katie's Pizzeria Cafe
My friend at work had ranted and raved about this place so Moe and I decided to give it a try on one of his days off. I immediately loved this place as soon I stepped in the door. From the street, it looks nothing more than a hole in the wall. However, once you walk in, it is a long narrow restaurant with a one of kind atmosphere. The tables are a eclectic assortment of dinning room tables and chairs. The tables are of varying lengths and chairs of varying heights. The walls are covered in antique mirrors and decorations. The menu is an assortment of artisan style pizzas. We ordered two without knowing how big they were. Next time we would easily be able to split one with enough left over to take home. We ordered the seasonal pizza which was butternut squash with a balsamic reduction (not on the regular menu). It had a goat cheese spread as well as arugula scatter across the pizza. The other favorite was the toasted ravioli. If you go to the restaurant, this is a MUST ORDER..

- Prosciutto, Sliced Apple, Fontina Cheese Pizza - Price $16.95. This was a sweet and salty delight which has inspired numerous homemade pizzas since I tried it.

Chocolate Covered Strawberries
HAPPY VALENTINES DAY!!!!!
I have never actually made chocolate covered strawberries but I figured with two ingredients, how could you possibly go wrong?!!? Moe LOVES strawberries so I figured that this was a thoughtful gift that he'd enjoy since we really weren't going to exchange presents this year (as are most years because we are on a tight budget). I didn't really have a recipe but again, two ingredients so I thought I'd wing it. It turned out pretty well. The only complaint was that the chocolate was a bit lumpy so I'd recommend using double broiler next time instead of the microwave AND chopping the chocolate before heating.
Chocolate Covered Strawberries

Serves: 2 servings
10 strawberries, rinsed but stems left on
1 cup of semi sweet chocolate chips (probably better if chopped up)
1 tsp of water (if necessary to thin out the chocolate)
In a microwave safe bowl or a double broiler, melt chocolate. Dip each strawberry into the melted chocolate and place on wax paper (or parchment paper). Place in fridge for 20 minutes while chocolate sets. Serve slightly chilled.

Roasted Broccoli
As much as I try to be healthy, I have fallen into a rut for healthy eating. Whenever this happens, I have two things I do to get back on track....
#1) Go shopping - All I have to do is try on a few pieces of clothing that don't fit and I go off the deep end. Diet starts immediately.
#2) Go grocery shopping - I create rules and am only allowed to buy healthy things (minimal frozen products, mostly fruits and vegetables). The only junk food I buy is one dark chocolate bar which I freeze and keep as backup.
Now that both things have been accomplished, I officially am back on wagon again. Tonight was roasted broccoli. Although it sounds pretty bland, I have figured out how to make this into a wonderful side dish that has both crunch and a bit of sweetness.
Roasted Broccoli

Serves: 4 small servings or 2 large servings
1 head broccoli
1 tsp olive oil
1 tsp water
1/8 tsp cranberry - pear vinaigrette
1/2 tsp brown sugar
pepper
Preheat oven to 400 degrees. Wash and cut broccoli into small florets. In a bowl, whisk together the last five ingredients. Add broccoli to the bowl and mix together. Place broccoli in a baking dish and discard any extra olive oil mixture. Bake in the oven for 15 minutes or until desired doneness. You want the broccoli to be crunchy and golden on the edges.

Black Bean, Corn, and Lentil Salsa
True confessions. With Moe being on night float for the last month or so, I have secretly become addicted to the show, Bones. This would be fine if it wasn't a well established show and just started its 7th season. Each season is about 20 episodes. I'm on season six. Yes, do the math. It is over 100 episodes. Bottom line, I swore to Moe I was finishing the sixth season on netflix tonight and then was going to read a book tomorrow to counteract the loss of brain cells that I've had from being glued to the television. I originally told Moe I'd stop watching once Bones and Seeley get together (aka... have sex), but it is taking FOREVER (I mean I'm on season 6, episode 18 and still no action.... really?! Just get it over with)!. Anyways, I was at Trader Joe's today and the free sampling was a lentil salsa. Although it wasn't the most appeasing on the eye, it was delightful. I bought it as a snack for my Bones season six marathon :)

1 package Trader Joe Black Bean and Roasted Corn Salsa
1 package Trader Joe Steamed Lentils
1 bag Baked Tostitos Tortilla Scoops
Boil a pot of water over the stove. Drop the unopened bag of lentils into the boiling water and cook for 6 minutes. Meanwhile, pour salsa into a mixing bowl. When lentils are done, open bag and pour half the mixture into mixing bowl. Put the remaining lentils in a left over dish and save for a later use. Serve immediately with tortilla chips.
